Vinification: Each grape variety is vinified separately. The grapes are softly
pressed. 15 days of fermentation started by special selected
yeast strains, under controlled temperatures. Successively
the wine is pumped over several times to clean the wine of
the skins etc. The wine of each grape variety is kept separate
until the end of February, thus a homogeneous mass is
created on the basis of the characteristics of each type of wine.

Opens fat, full with hints of mature fruit and citrus with a
long persistent finish.
Food matching: Excellent aperitif, but a great match with delicate first courses
and meats, particularly white.

Lively and fresh blend, with plenty of lemon, lime and mineral character. Medium bodied, with fresh acidity and a long and fruity finish. From Tocai Friulano, Pinot Bianco and Sauvignon. Drink now. 1,250 cases made. (JS)
Medium bodied, with interesting ripe apple and syrup on the nose and palate, though the interest falls off, and the finish is rather short. Very drinkable though. 700 cases made. (JS)
