Vinification: After the grapes are harvested and selected, they are placed in wooden drawers and transferred to special areas that are dry and well aerated. In this way, the grapes wither naturally and thus have an extraordinarily high concentration of sugars, glycerol, and other aromas are obtained after extraction. After 3-5 months, the withered grapes are pressed in January. Due to the low temperature, the process of fermentation is lengthy and slow. The maceration can take up to one month. The wine is then aged in oak casks or small barrels, where it continues to ferment. It remains in these casks for about 3 years.

Goes well wit roast game, roasted meats, and hearty, flavorful
aged cheeses that are no longer soft. If it is not served with
meals, it is an extraordinary wine for "meditation".
