Vinification: |
After
the grapes are harvested and selected
in the zone that is dedicated to the viticulture of grapes destined for
this wine, they are placed n wooden drawers and transferred to special
areas that are dry and well aerated. In this way, the grapes wither
naturally and thus have an extraordinarily high concentration of
sugars, glycerol, and other aromas are obtained after extraction. After
3-5 months, the withered grapes are pressed in January. Due to the low
temperature, the process of fermentation is lengthy and slow. The
maceration can take up to one month. The wine is then aged in oak casks
from Slavonia or small barrels. |
