Vinification: |
To
create this wine, carefully chosen grapes
from vines at the beginning of each row, which have the finest grapes.
The fruit is harvested late in our best vineyards which are located in
the heart of Valpolicella Classico region. These grapes were than left
to wither in traditional "fruttai", before being subjected to a long
maceration carried out in the presence of the skin. The "Testal" is
perfectly adapted for long aging in the small oak casks, and augments
its fruity character. |
