Vinification: The grapes are destemmed and the must fermented with the skins for 4-6 days at 81° F (26-27°C). During this phase the wine is pumped over 2-3 times per day to extract the color from the skins. After the separation of must and skins the fermentation comes slowely to an end after 7-10 days.
