The fermentation is in autoclaves with 10 to 14 days of cold maceration with the skins. Before all of the sugar is converted, the fermentation is interupted by lowering the temperature to 32 degrees F. Before each bottling the fermentation is restarted and the CO2 is captured to give the wine its frothy character.
