Vinification: The fermentation is in autoclaves with 7-8 days of cold maceration with the skins. Before all the sugar is converted, the fermentation is interupted by lowering the temperature to around 32º F. Before each bottling the fermentation is restarted and the CO2 is captured to give the wine its frothy caracter.
